SAPIT (Carmenere) 2021
SAPIT from the Latin phrase "nemo mortalium omnibus horis SAPIT" which means "of mortal men, none is wise at all times." As a well lived life includes taking risks and adventure, it also involves making mistakes, learning, adapting, and moving forward. Why not enjoy this wine and reflect on some of your most epic failures and what you learned.
Pairs nicely with smoked, grilled, or roasted meats, chicken, pork, and veal. Is a nice compliment to spicier dishes as well as strong and hard cheeses.

Sean P. Sullivan's Northwest Wine Report - 91 points - Critic’s Choice
Carménère remains a relatively rare varietal wine in the Pacific Northwest. This is an excellent example. The aromas lead with notes of sliced jalapeño and green pepper, black cherry, and flower – classic notes for this variety. Supple, textured, supremely pure blue and darker fruit flavors follow. It stretches out on the finish. Fans of Carménère, seek this wine out. It’s beautiful.
